Measurements are approximate but that’s ok because it’s impossible to screw up this cake. It’s so easy to whip up after bedtime for a late-night work snack, with strawberries for a fancy breakfast, for a special lunchbox surprise, or just to have handy in case anyone pops by.
Ingredients
1 ½ cups flour
¼ cup almond flour
2 tbsp cornstarch
1 cup white sugar
Tsp baking soda
Tsp salt
Tsp baking powder
Tsp lemon zest
⅓ cup olive oil
1tsp vanilla extract
1 cup or so of Dole pine orange banana juice
A squeeze of lemon juice
Preheat the oven to 350
Grease a regular-sized loaf pan.
Mix the dry ingredients, add the wet ingredients, mix it all up, put in the pan.
Bake it 30-40 minutes until you can smell it, check to see if it is golden brown all over.
Let it cool for a while before cutting into it. If you want to get really fancy, sprinkle it with powdered sugar before serving.
